Get a turkey between 10-14 lbs. In your smoker, build a fire with temperature between 225 and 250 degrees using any of these suggested woods: oak, hickory, mesquite, or apple. Place a water pan over the flame to keep a moist heat. Place turkey breast-side-up in the smoker. Smoke turkey for 30 minutes per pound of meat or until a meat thermometer inserted into the thickest part of the turkey reads 165.
