How do I know when my turkey is fully cooked?

Use an instant read thermometer and insert in the thickest part of the breast.  Push the thermometer until it reaches the bone then pull it back out half way.  The turkey is done when the thermometer reaches 165°F.  

So that the turkey retains all its moisture, allow it to rest for 30 minutes before slicing.
