Do I have to cook my turkey immediately after brining?

No, you can brine your turkey ahead of time.  Remove turkey from brine, pat dry, and place on rimmed baking sheet or inside roasting pan.  Store turkey in refrigerator, uncovered, for up to 24 hours before cooking.  Allow turkey to sit at room temperature for 30 minutes before cooking.
