How do I know when my fish is done cooking?

When the fish is no longer translucent, but has become completely opaque it is done cooking. We suggest using a thermometer and checking along the way. The USDA says fish should be cooked to 145•F.  However if you are serving fresh sushi grade tuna, it can be served rare, and salmon is often better served medium to medium-rare.
