When roasting or grilling a whole chicken, we love the results of butterflying. It insures faster cooking time and crisp skin all the way around. Butterflying is actually quite simple, using sharp kitchen shears cut along each side of the backbone (located on bottom side of chicken) and remove. Turn chicken over and using palm of hand, press firmly down on breastbone to flatten.
