How do you descale a fish?

Most fish you buy probably don’t have the skin or scales on it, but if you are cooking something you caught yourself you might want to know how to descale it. Hold the fish from the tail and grab a chef’s knife, going in a downward motion scrape the scales off the fish. Be sure to hold your knife at a 45 degree angle.  Its a tedious task, but once you get the hang of it you’ll be a natural.
