Pork loin and tenderloins are dramatically different cuts of meat. Loin is a large piece of meat cut from the animal’s back and can be sliced into steak like portions and grilled or seared then oven roasted. Pork tenderloin is leaner and usually averages about 1 pound. It is the muscle that runs along the backbone of the animal. It is best seared over higher heat and then moved to lower heat to finish. It cooks quickly and can easily be overcooked.
