It is pork that has been injected with water, salt and sodium phosphate. This mixture works as a brine so that your pork remains tender and juicy throughout the cooking process. This “enhance” can also include seasonings and spices to better flavor the meat. We recommend getting regular pork and brining it yourself. This way you have total control over the quality and flavor of what you are adding to your meat. If you do purchase enhanced pork, do not add additional salt when cooking.
